INGREDIENTS

Butter 8oz (225gms)
Brown sugar 8oz (225 gms)
Flour 10 oz (300 gms)
Dried mixed fruit 1lb (500 gms)
Lemon OR vanilla essence (1 tsp)
4 large eggs

METHOD

Mix the butter and sugar. Mix the fruit and flour. Combine the 2 mixes with 4 large eggs and lemon or vanilla.Place in a lined 8 inch cake tin. Place in a pre-heated oven at 150 degrees centigrade for about 1 and a half hours.
